I have been cooking/baking a lot of things that I have come across on Pinterest over the last month or so, so thought maybe I should share the outcomes occasionally. Katrina from The Organised Housewife commented on my recent meal planning post, asking for the recipe for the Coconut Chicken. This one one of my Pinterest finds, and it was SO yummy!

Chicken Breast– boneless, skin off (I used quite a large double breast)

2 large eggs

1/4 cup coconut milk

1/2 cup plin flour (all purpose)

1 cup panko bread crumbs (I used a bit extra)

1 cup shredded coconut

1/2 tsp salt

Vegetable oil for frying

Sweet Chilli Sauce to serve


Portion chicken into pieces, trimming excess fat as you go.

Set up 3 bowls for the crumbing process. Put the flour in the first bowl, whisked eggs and coconut milk in the second, and mixed panko and coconut in the thrid.

Coat chicken pieces in flor, and gently shake of excess. Coat floured chicken in egg mix, and let excess drip off before coating with the panko/coconut mix

Heat oil in a wok or saucepan, and fry chicken in small batches.

Drain well

Serve with rice and sweet chilli sauce. You could serve plain rice, fried rice, noodles, or even steamed vegetables. I served ours with coconut rice to use the rest of the coconut milk.

The coconut rice was a bit of a last miniute “ah, just chuck it all in and see what happens” type adventure, but I will list what is in it incase anyone is interested. Please remember though, that this is just an estimate of what I used.

Tanya’s Coconut Rice

1.5 cups long grain rice, rinsed well

3/4 tin coconut milk (400ml tin I think)

2 tins of water

2 star Annise

1 cinnamon stick

2 Tbl sp sugar

Place all ingredients in bowl of electric rice cooker, and mix well. Turn on and cook until rice cooker turns off. Let sit for 5-10mins to steam.

Note: keep an eye on the liquid level as the rice cooks. I originally put in 1.5 tins of water, and found I needed to add more as the liquid absorbed to avoid burning the rice.

I go through phases with meal planning. Some weeks I’m all over it, others I’m just keen to have a dig and go with whatever we have in the pantry/fridge/freezer.

Today is shopping day however, and I want to make the most of what we do already have on hand, so meal planning it is! Some of these are Weight Watchers recipes, as I am currently on the program, some are just recipes I have come across, that we all anjoy, and I work into the meal plan (points wise) when I’m not too lazy oops!

Wednesday- Hamburgers (The ‘works’ burger- WW Recipe- 10pp per serve)

Thursday- Pumpkin, Spinach & Ricotta Canneloni- (8pp per serve)

Friday- Lemon Chicken Stir fry with steamed rice

Saturday- Chicken Sausages and vegetables

Sunday- Pork in Spicy Plum Sauce, served with rice and steamed asian greens- (WW recipe- 8pp per serve)

Monday- Crumbed Whiting filets, with home made potato wedges and salad

Tuesday- Thai Red Curry with rice (using lite coconut milk to reduce the fat content)
